nixos/workflows: restructure enable option
The type is probably not apprioriate since I want to be able to install
multiple of them at a given time but we'll see.

GNOME Shell with the Settings application

Yes, its a theme that configures GNOME. I mostly want a usable GNOME environment out-of-the-box (with my modifications and whatnot) including a bunch of applications, GNOME extensions, and other core services.
